Crab Salad


Crab Salads are delicious, gourmet fare. Many crab salads mix fresh crab meat with fruits or vegetables and tossed with a tasty dressing or vinaigrette.

Crab comes in a variety of shapes and sizes, and is available year round at local seafood markets and by purchase on the internet. Most supermarkets and specialty markets carry fresh crab as well as imitation crab.

Crab salads are ideal for appetizers when served with crackers, or as a delightful brunch, lunch or dinner main course when served on lettuce or puff pastry.

Alaskan King Crab Salad
 
Ingredients -
1 1/2 pound Alaska King Crab Legs, steamed
2 large Tomatoes, cut into wedges
2 hard-boiled Eggs, cut into wedges
1 Cucumber, sliced
8 spears Asparagus, cooked or canned
1 sliced Avocado
1/2 cup pitted Black Olives
Lettuce
Lemon or Lime wedges

Crab Louis Dressing:
2/3 cup Mayonnaise
1/3 cup Chili Sauce
1 tablespoon minced Green Onion
2 teaspoons Lemon or Lime Juice
1 teaspoon prepared Horseradish
1 dash bottled Hot Sauce

 
Preparation:

Remove crab meat from shells and cut into 2-3 inch pieces. Arrange crab, tomato, egg, cucumber, asparagus, avocado, and olives on individual lettuce-lined plates; garnish with lemon. Serve with Crab Louis dressing.

Combine and mix well.
