When it comes to crab salad, what you want most is that fresh taste from the sea. Crab has a slight sweetness to it, like many kinds of seafood. For those who cannot eat the real thing, imitation crab is the next best thing. Made from white fish like pollock, imitation crab can be flaked to resemble bits of real crab. It also holds up well when you want to make a crab salad sandwich. While real crab may be a little delicate to put between bread, imitation crab can hold its own.
Unlike many seafood salads that add in a lot of other ingredients, ours is mostly seafood. The scallions and celery in our recipe just add a little crunch for interest. The star is the seafood! Once you try this delicious crab salad sandwich, you will wonder why you never tried one before. Do not be surprised if it becomes one of your favorite lunches. Besides making a great lunch, you could also eat it for a light supper, especially with a cup of delicious clam chowder. Leftovers could be used as a mid-afternoon snack. You can eat this sandwich on its own or pair it up with a small green salad or cup of soup, like the aforementioned chowder. You will find you gain a whole new respect for imitation crab once you try this sandwich.

Doesn't our Seafood Salad Sandwich look delightful? The fresh taste of seafood is always welcome. We have made ours from imitation crabmeat and shrimp, but you could also use cooked fish, crab, or lobster meat. This is a delightful way to enjoy the bounty of the sea. Serve it for lunch, a light dinner, or even an afternoon snack. It is important to choose a soft roll or croissant for this sandwich so the bread complements rather than competes with the delicate seafood. Once you taste this seafood sandwich, you will wonder why you never had one like this before.
