Ingredients -
3 pounds whole cooked crabs
1 tablespoon fresh parsley, finely chopped
⅛ teaspoon dried red pepper flakes
1 tablespoon fresh basil, finely chopped
¼ teaspoon salt
2 tablespoons lemon juice
6 tablespoons extra virgin olive oil
2 teaspoons fresh rosemary, finely chopped
2 tablespoons dry white wine
1 teaspoon garlic, finely chopped
2 teaspoons grated lemon zest
Leaves of ½ a lettuce
Preparation:
Remove the legs from the crabs. Remove the crabmeat from the body and set it aside.
Combine all the ingredients except the lettuce and crab, then cover and refrigerate this mixture.
Arrange the lettuce on a large serving plate and arrange the crab legs around the outside.
Arrange the crabmeat in the middle and serve, drizzled with the dressing.
