Stacked Crab Avocado Salad Recipe

This spectacular crab salad recipe will make you famous in your circle. Each layer is separated by a crunchy layer of fried wonton wrappers. Crunchy Crab Salad Tower

Ingredients -

10 ounces jumbo lump crab meat
⅓ cup wasabi mayonnaise
Juice from ½ lime
1 avocado, peeled and diced
1 teaspoon lemon juice
2 small tomatoes, diced
1 teaspoon olive oil
Sea salt
Freshly ground black pepper
Frisee lettuce for garnish
Fried wonton wrappers
Baby bok choy leaves for plating
Olive oil

Preparation:

Pick through the crab meat to remove any shell fragments.

Mix the crab meat with the wasabi mayonnaise gently to avoid breaking the crab pieces. Set aside.

Toss the diced avocado with lemon juice and set aside.

Mix the tomatoes with the olive oil, salt and pepper. Set aside.

Fry up as many wonton wrappers as you need: 6 per salad serving. Drain on paper towels to soak up excess oil.

On each plate, lay out baby bok choy leaves in a fan shape. Drizzle lightly with olive oil. Place two wonton wrappers on top.

Cover the wrappers with the crab mixture. Top with two more wonton wrappers.

Cover the wrappers with diced avocado. Top with two more wonton wrappers.

Cover the wrappers with diced tomatoes. Top with frisee lettuce for garnish.
