10 ounces crab meat, cooked, and picked through to remove shell fragments
2 Tablespoons mayonnaise
⅔ cup mango, peeled and diced
¼ teaspoon cayenne pepper
2 Tablespoons fresh chives, chopped
Lettuce leaves
Preparation:
Absorb any excess moisture from the crab meat by wrapping it tightly in a paper towel. Place the crabmeat in a bowl and add the mayonnaise, cayenne pepper, and chives. Mix gently but well.
Place lettuce leaves on individual plates. Pile crab mixture in the center.
Scatter the diced mangos around the plate generously.
Garnish if desired with parsley and ginger.
