Ingredients -
8 ounces imitation crab sticks
7 ounces sweet corn
4 hard boiled eggs
½ cucumber
3 to 4 Tablespoons mayonnaise
2 cups sliced peaches
Salt and pepper to taste
Preparation:
Chop the boiled eggs after they have cooled.
Rough chop the cucumber and the crab sticks.
Mix the crab, corn, eggs and cucumber with the mayonnaise. Season to taste with salt and pepper.
Dish up the salad and place a scoop of peaches right alongside it on the plate.
