Ingredients -
2 cups imitation crab meat
2 cups sugar snap peas
6 ribs celery, sliced
Lettuce
For the Dressing:
¼ cup cider vinegar
3 whole fresh basil leaves
⅛ teaspoon ground black pepper
¾ teaspoon salt
¼ cup apple juice
¼ cup extra virgin olive oil
¼ teaspoon dry mustard
½ cup chopped parsley
1 teaspoon honey
Preparation:
Roughly chop the imitation crab into large pieces.
Boil the sugar snap peas for 30 seconds, and then plunge them into cold water.
Arrange the lettuce on a serving plate.
Combine the crab meat, sugar snap peas, and celery and put this mixture on top of the lettuce leaves.
Combine all the dressing ingredients in a blender and process until smooth. Pour this mixture over the top of the crab mixture and serve right away.
